TITLE: Research & Development Manager
-value-added retail and foodservice consumer seafood products.
LOCATION: Pacific Northwest
SALARY: Competitive six-figure base salary + 10% bonus
JOB DESCRIPTION:
This position is responsible for development of new products from inception to full manufacture,
and to improve manufacturing processes and ingredients for existing products.
Specifically, this position leads all scientific aspects of product development,
including project management of new products, recipe development and commercialization,
prototype development, and test production. Oversees the spice blending personnel
& operations to achieve objectives.
The primary measure of success in this position will be the development of
successful value-added retail and foodservice consumer seafood products.
ESSENTIAL FUNCTIONS
1.Develops new products based on company and customer needs.
2.Develops and blends seasonings and other dry blends for company needs.
3.Works closely with the sales department to develop new products.
4.Sources raw materials to meet blending requirements and passes purchasing information and
requests to Packaging Buyer for purchase.
5.Works closely with Production and Maintenance Departments when developing new products.
6.Prefects and improves manufacturing methods for existing products.
7.Monitors processing and packaging of Blending Room product to insure quality and
products meet specifications.
8.Oversee spice blending personnel.
9.Follows all company safety policies and procedures.
10.Responds to change productively and handles other duties as required.
SKILLS
Organized, detail oriented self-starter who is able to combine creative and pragmatic
thought processes for product creation. Strong verbal, written and oral
communication skills for interaction with co-workers and customers.
Working knowledge of various methods of food preservation and their application to seafood.
QUALIFICATIONS BS or MS in Food Science or equivalent with broad expertise in proteins. Seafood experience highly desirable, but will make exception for the right candidate who is a specialist in other proteins and has a track record of success in product development.
Minimum of (10) years experience in new product development of diverse food systems.
Five (5) years experience in spice blending and seasoning duplication required.
Must have five (5) years "hands-on" experience in both quality control and the
manufacture of diverse food items.
This position is responsible for determining project resource requirements and preparing
project plans, as well as prioritization and allocation of technical and financial
resources. Crucial to success is the ability to identify the key technical hurdles
and the ability to work with production, sales, food safety, marketing, and senior
management to overcome them.
A deep knowledge of food ingredient functionality, food preservation methods,
seasoning duplication, microbiology, protein chemistry, HACCP, food safety and
sanitation, food manufacturing processes, food processing equipment, sensory
testing, and experimental design is essential.
